Most roasters get into hospitality after the coffee. My Kingdom For A Horse read the other way around. Three cafes in the Adelaide CBD, one on Waymouth Street, one on Pirie Street, one on King William Street, and a restaurant, A Prayer for the Wild at Heart. The Pirie Street room is the big one and can seat up to sixty.

It was founded by two women, Emily Raven and Rachel Mead. Raven brings more than thirty five years in professional cookery. Mead holds a Master of Management from Macquarie University. That is a food background and a business background rather than two coffee backgrounds, and it shows in the way the whole thing is put together.

Ten years of feeding the Adelaide CBD, with the coffee held to the same standard as the kitchen.

The detail that gives them away is the milk. It comes farm direct from Tweedvale in the Adelaide Hills. Nobody sources milk that way by accident, and nobody does it for the coffee alone. It is a food business decision applied to a flat white.

Approach

How they roast

The shape of the business does most of the work here. The coffee is roasted for cafes they own and pour themselves, every day, in front of the people drinking it. That is a tighter feedback loop than most wholesale roasters ever get, and it tends to produce coffee built to work under milk and under pressure rather than coffee built to win a cupping table.
