The rundown

What it is, and why it's here

Coffee goes stale because of air, not time. Most canisters just put a lid over the problem. The Airscape has an inner lid you press down onto the beans, which forces the air out before you seal the outer lid over the top.

Fill it, press down until the air escapes, click the outer lid on. That is the whole routine. The practical result is that the last third of the bag tastes a lot closer to the first third, which is where most home coffee quietly falls apart.
