Two Fish have been roasting in the Adelaide Hills for the better part of a decade, with a love of coffee they happily describe as bordering on obsessive. They roast in small batches each week, source from single farms and washing stations, and aim for full traceability back to the grower.
Sourcing matters to them as much as the roast. Years of community development work feed into how they buy: directly, ethically, and in a way that pays producers properly and keeps the relationships going season after season. The traceability is the point, not a sticker on the bag.
This round, four of their coffees land in the Allways rotation. One for the blend drinkers, one for the single origin espresso drinkers, one for the filter brewers, and one for the decaf crowd. The whole board, covered.

Brazil (Umburana, Minas Gerais) + Rwanda (seasonal lot) · Pulped Natural + Washed · Seasonal blend for espresso
A pulped natural Red Catuai out of Minas Gerais blended with this season's washed Red Bourbon from Rwanda. Built to be sweet, rich and heavy-bodied, and to hold its own under milk without going thin.
This is the everyday one. The flat white that tastes like it came from somewhere good, not a packet off the supermarket shelf.
Colombia Lomaverde
Finca Lomaverde, Santa Barbara, Antioquia, Colombia · Chiroso · Washed · 1,950 MASL
Grown by the Echavarria family at 1,950m in the hills of Antioquia. Chiroso is a rare variety, now understood to be an Ethiopian landrace, and at this elevation it turns into something properly complex.
Floral, juicy, and a long way from a flat supermarket espresso. One to pull a little slower and pay attention to.
Colombia La Esperanza
Palestina, La Plata, Huila, Colombia · Caturra · Washed · 1,815 MASL
A four-hectare farm run by Guillermo Mompotes and his family for more than 25 years. Almost nothing gets contracted out, which is usually a good sign for what ends up in the cup.
A filter drinker's coffee. Something to brew slow and sit with.
Colombia San Antonio Decaf
Inza, Cauca, Colombia · Caturra & Colombia · Washed, Ethyl Acetate · 1,800–2,100 MASL
A regional lot from 25 smallholders around San Antonio, decaffeinated with ethyl acetate derived from sugarcane. One of the cleaner decaf methods around, and it shows in the cup.
Proper coffee that happens to have the caffeine taken out, rather than the other way around. For the Decaf Coffee Subscription crowd who've been waiting for one that holds up.
How Two Fish works
Two Fish keep it deliberately small. Beans get sourced from single farms and washing stations, roasted in small batches each week, and the aim is to show off what each coffee already is rather than stamp a house style over the top of it.
Everything is roasted to order, so what lands in your Allways box was almost certainly green a week or so ago. The blend rotates with the season, which is why this one is 23° South now and might be something else next time.
